Ingredients

  • 1 cup (250 milliliters) Frank's RedHot® Mango Habanero Wings Sauce
  • 2 teaspoons (10 milliliters) McCormick® Organic Jamaican Jerk Seasoning
  • 1 teaspoon (5 milliliters) light brown sugar
  • 1 pound (500 grams) boneless skinless chicken thighs, trimmed and cut into 1-inch (2.5-cm) cubes
  • 2 medium red bell peppers, cut into 1-inch (2.5-cm) chunks
  • 1 bunch green onions, cut into 2-inch (5-cm) sections

directions

  1. MIX RedHot® Mango Habanero Sauce, jerk seasoning and brown sugar in a small bowl until well blended. Reserve 2 tablespoons of the Sauce mixture for basting. Place chicken in glass dish. Add remaining Sauce mixture, tossing to coat well. Cover and refrigerate 30 minutes or longer for extra flavor.
  2. THREAD chicken onto skewers, alternating with bell peppers and green onion pieces. Discard any remaining marinade mixture in dish.
  3. GRILL skewers over medium heat, turning frequently and brushing with reserved Sauce mixture, until lightly charred and cooked through, about 6 to 8 minutes (internal temperature of chicken should reach 165°F/74°C).

    Tip: Use seasonal vegetables or fruits such as zucchini, squash, pineapple or mango in addition to bell peppers and green onion!
