  • 1 1/2 pounds russet potatoes, cut lengthwise into wedges
  • 1 cup flour
  • 1/4 cup cornstarch
  • 3 tablespoons Frank's RedHot® Original Seasoning Blend, divided
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2 teaspoons paprika
  • 3 teaspoons salt, divided
  • 1 teaspoon ground black pepper
  • 2 eggs, beaten
  • 1/4 cup milk
  • Vegetable oil or canola oil, for frying
  • Golden Dip'n Sauce


  1. WASH potatoes well, and cut into wedges making sure they all have a similar thickness. The wedges should be no more than 1/4 of an inch thick. Add the wedges to a bowl and cover them in cold water. Allow the potatoes to soak for at least 1 hour or overnight.
  2. COMBINE flour, cornstarch, 2 tbsp Frank's RedHot® Original Seasoning Blend, onion powder, garlic powder, paprika, ground black pepper, 2 tsp of salt. In another large bowl, mix together the eggs and milk.
  3. HEAT 2 inches of oil in a large pot or cast iron skillet over medium heat. Allow the oil to reach between 350°F - 365°F. Drain the water from the potatoes and pat-dry.
  4. DREDGE the potatoes in the flour, then dip into the egg wash, and then back into the flour.
  5. PLACE, carefully, the wedges in hot oil. Cook until the potatoes are crispy golden brown and soft inside. Remove the wedges from the oil and toss them with the remaining salt and Frank's RedHot® Original Seasoning Blend.
  6. SERVE hot and crispy with FRANK'S RedHot® Dip'n Roasted Garlic Sauce.

    Test Kitchen Tips: • Try making these in you Air-Fryer! After soaking the wedges, toss them into the egg mixture until fully coated. Season onion powder, garlic powder, paprika, salt, ground black pepper, and 2 tbsp Frank's RedHot® Original Seasoning Blend. Place wedges in the basket of the air fryer and cook for 12 - 15 minutes at 400°F making sure to turn the wedges half-way through. Depending on the size of your air-fryer you might have to cook the wedges in batches.
