Ingredients

  • 1 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 1 medium red bell pepper, seeded and chopped
  • 2 cups chicken stock
  • 2 cups Frank's RedHot® Bloody Mary Mix
  • 1 package McCormick® Taco Seasoning Mix
  • 1 can (11 ounces) whole kernel corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups shredded rotisserie chicken
  • 1 cup tortilla strips
  • 1/4 cup finely chopped fresh cilantro

directions

  1. HEAT oil in 4-quart saucepan on medium-high heat. Add onion and bell pepper; cook and stir 5 minutes or until softened. Stir in stock, Bloody Mary Mix, Taco Seasoning, corn and beans.
  2. BRING to boil; reduce heat and simmer 10 minutes. Stir in chicken and cilantro. Simmer until heated through.
  3. TO SERVE, ladle soup into serving bowls. Top each with 2 tablespoons tortilla strips. Serve with desired toppings, such as shredded cheese, sliced avocado, sour cream and lime wedges.
