Black-Eyed Pea Soup This soup is a version of Hoppin' John, a traditional southern dish served at New Years. black-eyed-pea-soup Makes: 6 servings 1/2 cup chopped bacon 1 cup chopped onion 2 tsp. minced garlic 2 (16 ounce) can black-eyed peas, undrained 2 1/2 cups reduced-sodium chicken broth 1/4 cup FRANK'S RedHot® Original Cayenne Pepper Sauce 1/2 tsp. dried thyme leaves <p>Cook bacon in large saucepan until crisp. Add vegetables and cook 5 min. until tender.</p><p>Stir in remaining ingredients. Heat to a boil. Simmer, covered, 15 min. until flavors are blended.</p><p>Ladle soup into bowls. Serve with rice and garnish with parsley.</p>

Directions

- Tips

Tip: For an attractive presentation, pack cooked rice into small ramekin dishes. Unmold into soup bowls. Ladle soup around mound of rice.
