  • RedHot Spicy Salsa
  • 3 medium vine-ripe tomatoes, seeded and coarsely chopped
  • 2 tablespoons chopped red onion
  • 2 tablespoons finely chopped fresh coriander
  • 1 clove fresh garlic, finely chopped
  • 3 tablespoons FRANK'S RedHot® Original Cayenne Pepper Sauce
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon sugar
  • Keto Buffalo Cauliflower Wings
  • 4 tablespoons FRANK'S RedHot® Buffalo Wings Sauce
  • 2 melted butter
  • 1 head cauliflower, cut into bite size pieces
  • 75 grams almond flour

directions

  1. In preparation for the buffalo cauliflower wings, pre heat the oven to 230°C (450°F, Gas Mark 8).
  2. For the spicy salsa, place all ingredients in a food processor or in a bowl and use a hand blender to pulse mix the salsa ingredients until well blended, but still slightly chunky. Alternately this step can be done by hand however the benefits of using a food processor or blender makes the salsa more liquid and easier to use as a dip.
  3. For the buffalo cauliflower coating, mix the buffalo sauce and melted butter in a large bowl. Add the cauliflower bites and toss until the cauliflower pieces are well-coated and have absorbed the buffalo sauce mix. Gradually sprinkle almond flour over the cauliflower in the bowl and keep tossing to coat.
  4. Once well covered arrange the cauliflower wings in a single layer on a non stick baking tray or a foil lined baking tray sprayed with non stick cooking spray.
  5. Place the tray with the buffalo sauce coated cauliflower in the pre heated oven and roast for 30 minutes or until lightly browned.
  6. Once ready serve the buffalo cauliflower bites with the RedHot salsa dip.
