Spicy Ham & Black Bean Soup
Makes: 8 servings
2 tablespoons vegetable oil
1 large onion, chopped
3 cloves garlic, minced
4 cans (15 ounces each) black beans, undrained
4 cups reduced-sodium chicken broth
1/3 cup FRANK'S RedHot® Cayenne Pepper Sauce
1 Tbsp. ground cumin
4 cups (about 1 lb.) diced boiled ham [or smoked ham or smoked keilbasa sausage]
1 cup diced canned tomatoes
<p>HEAT oil in large saucepan; saute onion and garlic until tender. Stir in beans, broth, Frank's RedHot Sauce and cumin.</p><p>HEAT to boiling. Simmer, partially covered, 20 min.; stirring often.</p><p>PUREE 2 cups soup mixture in covered blender. Return to saucepan. Stir in ham and tomatoes; heat through.</p>

Tip: This soup freezes well. Freeze leftovers in individual portions. Thaw and reheat in microwave oven.
