Black-Eyed Pea Soup logo

Makes: 6 servings
Prep Time: 10 min
Cook Time: 25 min

Ingredients:

  • 1/2 cup chopped bacon
  • 1 cup chopped onion
  • 2 tsp. minced garlic
  • 2 (16 ounce) can black-eyed peas, undrained
  • 2 1/2 cups reduced-sodium chicken broth
  • 1/4 cup FRANK'S RedHot® Original Cayenne Pepper Sauce
  • 1/2 tsp. dried thyme leaves

Directions:

Cook bacon in large saucepan until crisp. Add vegetables and cook 5 min. until tender.

Stir in remaining ingredients. Heat to a boil. Simmer, covered, 15 min. until flavors are blended.

Ladle soup into bowls. Serve with rice and garnish with parsley.

Tips:

Tip: For an attractive presentation, pack cooked rice into small ramekin dishes. Unmold into soup bowls. Ladle soup around mound of rice.
