Spicy Ham & Black Bean Soup logo

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cans (15 ounces each) black beans, undrained
  • 4 cups reduced-sodium chicken broth
  • 1/3 cup FRANK'S RedHot® Cayenne Pepper Sauce
  • 1 Tbsp. ground cumin
  • 4 cups (about 1 lb.) diced boiled ham [or smoked ham or smoked keilbasa sausage]
  • 1 cup diced canned tomatoes

Directions:

HEAT oil in large saucepan; saute onion and garlic until tender. Stir in beans, broth, Frank's RedHot Sauce and cumin.

HEAT to boiling. Simmer, partially covered, 20 min.; stirring often.

PUREE 2 cups soup mixture in covered blender. Return to saucepan. Stir in ham and tomatoes; heat through.

Tips:

Tip: This soup freezes well. Freeze leftovers in individual portions. Thaw and reheat in microwave oven.
