2 pounds new potatoes; peeled and quartered

3/4 teaspoon salt

2 tablespoons vegetable oil

4 large green onions, cut into 1/2-inch pieces

2 cloves garlic, minced

1 teaspoon all-purpose flour

1/4 teaspoon sugar

3 tablespoons FRANK'S® RedHot® Original Cayenne Pepper Sauce

1/4 teaspoon liquid smoke


Place potatoes, 1 cup water and salt in 3-quart microwave-safe baking dish. Cover; microwave on HIGH 15 minutes or until potatoes are tender, stirring once. Rinse under cold water; drain.

Heat oil in 10-inch nonstick skillet over medium heat. Add onions and garlic; cook and stir 2 minutes or just until tender. Stir in flour and sugar; cook, stirring, 1 minute. Combine 1/2 cup water, Frank's RedHot Sauce and liquid smoke in small bowl. Gradually stir into onion mixture. Bring to a boil. Reduce heat; cook, stirring constantly, 1 to 2 minutes or until mixture thickens slightly.

Gently add potatoes to skillet, stirring until coated with dressing and heated through. Serve warm.


Tip: This microwave method insures evenly cooked potatoes that don't fall apart. However, potatoes may be boiled in a saucepan on a conventional stove.

This was really tasty! Nice lingering spice, though I might add a little bit more liquid smoke next time. I did add some chopped bacon, because bacon makes everything better. Good served cold, too!
